To Die For Baked Apple Oatmeal (Lighter Version)

I decided the original was just a tad too fattening and full of sugar, so I decided to try to lighten it up a bit. It was a success. I have made it twice now. It is great to mix up the night before and then place in the oven in the morning.

Ingredients

  • Topping:
  • 1/3 cup oil (smart balance or vegetable oil)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 1/4 cup milk
  • 1/4 cup water
  • 1 tsp cinnamon
  • 1 Tbsp baking powder
  • 3 cups oatmeal
  • 1/2 tsp salt
  • 1 apple, diced
  • 2 Tbsp brown sugar
  • 2 Tbsp butter

Preparation

Step 1

Preheat oven to 350*.

Grease small casserole dish or 9 * 9 dish with baking spray.

In a large bowl, combine oil, white sugar and brown sugar with whisk. Mix in egg. Add baking powder, cinnamon, milk, water, and salt; Stir to combine. Mix in oatmeal and apples; Combine all ingredients. Pour into baking dish.

Sprinkle 2 tbsp brown sugar evenly on top. Dot with 2 tbsp butter.

Bake 30–35 minutes. Serve with a drizzle of milk over the top.

Tip: Substitute 1/4 cup apple sauce and 3 Tbsp oil in place of 1/3 cup oil for an even healthier version.
