Ingredients

  • Cake:
  • 4 Eggs
  • 2 cups Sugar
  • 1 cup Oil
  • 3 cups Zucchini
  • 1 1/2 cup Coconut
  • 1 tsp Cinnamon
  • 2 cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Vanilla
  • 1/2 cup Walnuts, optional
  • Frosting:
  • 8 oz Cream Cheese
  • 1 lb Powdered Sugar
  • 1 cup butter or margarine
  • 1 tsp Vanilla
  • 1 cup Dates
  • 1 cup Coconut

Preparation

Step 1

Mix together eggs, sugar, vanilla and oil.
Add zucchini, coconut, cinnamon.
Stir in flour, soda and nuts if using.

Pour into 9x13 pan. Bake at 350 for 25 to 30 minutes.

Mix all frosting ingredients and spread over cake.
