Ingredients
- 1 cup shortening
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups flour
- 2 cups rolled oats
- 1 package chocolate chips
- 1 cup coconut (optional)

Preparation
Step 1
Mix shortening, white sugar and brown sugar. Add eggs and vanilla.
Sift together and add soda, baking powder, salt and flour.
Add rolled oats, chocolate chips and coconut of using.
Drop by teaspoonfuls on un-greased cookie sheet. Bake for 12-15 minutes at 350 degrees.
Note:
This dough is very stiff. It works best in a stand mixer with a paddle.
