Gluten-Free Angel Food Cupcakes
You can eat more than one of these at a time, they're that tasty... easy to make too :).

Ingredients
- Bowl 1
- 2 eggs
- 1/3 cup milk
- 1 tsp vanilla extract
- 4 1/2 TBSP canola oil
- Bowl 2
- 1/2 CUP WHITE RICE FLOUR
- 1/3 cup and 1 tbsp tapioca flour
- 1/3 cup potato starch
- 1/4 tsp xanthan gum
- 3/4 cup sugar
- 1/2 tsp sea salt
- 1 1/2 tsp baking powder
- 1/4 tsp penzeys orange zest

Preparation
Step 1
PREHEAT OVEN TO 350 degrees
Combine ingredients from bowl 1 in a small bowl; mix well and set aside.
Combine ingredients from bowl 2 in another (medium/large) bowl; mix well, then fold in wet ingredients from bowl 1.
Bake at 350 for about 18 minutes if they're big
or 15 if they're medium (fill only half way to make regular/medium size)
