Peach Galette with Fresh Peaches
Ingredients
- Custard Filling:
- 1 Pie Crust of your choice
- 2-4 Peaches, peeled, pitted and sliced
- 2-4 tbsp Jam, your choice
- 2 tbsp Sugar, if needed to sweeten fruit
- 1 tbsp Raw Sugar for dusting
- 1 Egg, large
- 1 tbsp Butter, melted
- 1 tbsp Sugar
- 1/2 tsp Almond or Vanilla Extract (I used1/4 tsp of each)
- 1/4 cup Cream or Half & Half

Step 1
Set the oven at 400 degrees.
Lay your piecrust on a parchment covered baking sheet. Spread the jam of your choice around the center of dough. Lay your peach slices around the center and pile them up. Pull the edges of pie crust up around the peaches, tucking and folding it as needed to get it to stay in place. Pile any remaining peaches on top.
Place the pie in the oven and bake for about 25 minutes.
Meanwhile, in a small bowl, mix all of the custard ingredients. After 25 minutes, remove the pie from the oven and pour liquid into the center of the pie. Place back into the oven for 15-20 minutes or until the custard is set.
Remove from the oven and let cool 10-15 minutes and then transfer to a wire rack to cool.
