Chewy Chocolate Chip Cookies
These cookies are crispy on the outside and chewy on the inside. They are made with coconut oil in place of butter.
Ingredients
- 1/2 cup Coconut Oil
- 2 Eggs
- 1-1/2 cup Brown Sugar
- 1/2 tsp Salt
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 tbsp Vanilla
- 1-3/4 cups Flour
- 8 ounces Ghirardelli 70% Cacao Chocolate Chips
- 8 ounces Nestles Semi-sweet Chocolate Chips

Step 1
In a large mixing bowl, mix the coconut oil, brown sugar and eggs until well blended. Add remaining ingredients and mix until everything is well blended together.
Using a scoop or large spoon, make big balls of dough and place on cookie sheets lined with parchment paper.
Bake at 400 degrees for 12 to 14 minutes, or until they just start to brown around the edges. Remove from oven, wait about 4 or 5 minutes and then remove from pan and place them on a cooling rack.
Best served warm and melty but very good cool too!
