Ingredients

  • 1 lb fish fillets (perch, pike or
  • whitefish)
  • 1 med onion, chopped
  • ¼ c. green pepper, chopped
  • 1 clove garlic, minced
  • 1 tbs olive oil
  • 1 16 oz can diced tomatoes
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp sugar
  • Salt and pepper
  • 1 tbs cornstarch

Step 1

Cut fillets into serving size portions. Rinse fish, pat dry with paper towel

In skillet cook onion, green pepper, and garlic in oil till tender. Stir in undrained tomatoes, 1/3 cup water, and spices. Bring to a boil, turn down and simmer 10 minutes. Add fish to sauce, spooning some sauce over the fish. Return to a boil, reduce heat and summer, covered until fish flakes easily with a fork. Remove fish from skillet, leaving sauce.

Stir together 2 tbs cold water and cornstarch, and then stir into the sauce. Cook over medium heat, stirring until thick about 2 minutes.

Serve fish with sauce over pasta.
