Standing Prime Rib Roast

A special treat for a special occasion, this prime rib roast will please your family and guests.

Ingredients

  • 1 two-pound prime standing rib roast
  • kosher salt
  • freshly ground black pepper
  • 1 tablespoon olive oil

Step 1

At least 2 hours before cooking, pat the rib roast dry with a paper towel. Liberally sprinkle kosher salt and freshly ground black pepper on each side of the rib roast before pressing the seasonings onto the surface of the meat.*

Place on a rack in a roasting pan in the refrigerator for at least an hour to permit the meat to "dry".

Remove from the refrigerator and allow to come to room temperature before cooking.

Heat a skillet over high heat and add the olive oil to the pan before placing the rib roast in the pan. Sear each side until browned.

Place the rib roast on a rack in a roasting pan. Insert a remote temperature probe in the thickest part of the meat and set for 135 degrees.**

When the thermometer alarm sounds, remove the roast from the oven, cover with aluminum foil and a clean, heavy kitchen towel. Set aside for 15 minutes to allow for carry over heat. The temperature of the rib roast will rise at least five degrees, bringing the meat to rare. If you desire your meat more well done, then set the alarm for 140 degrees. Your rib roast will be anywhere from medium-rare to well done.

Lay the rib roast on its side and carve, parallel to the bone, into slices after cutting away the kitchen twine.

*Please don't fret about the amount of salt that is added to the rib roast as some of this will fall off during the cooking process. Besides, this is a special occasion.

**Do yourself a favor and invest in a remote digital thermometer (a thermometer that has a wired probe that sits in the meat while the controller sits outside the oven while cooking). I promise you that you won't regret this purchase.*** You will have much better control over how your food comes out of the oven and your family and friends will think you are a culinary genius.
