Spicy Turkey Cutlets

Ingredients

  • 4 turkey cutlets
  • sea salt
  • ground black pepper
  • 1/2 cup flour
  • 1 egg
  • 1 tablespoon water
  • 1 cup plain bread crumbs
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon dried Herbes de Provence
  • 1/2 teaspoon lemon pepper blend

Step 1

At least a couple of hours before dinner, salt and pepper the cutlets on each side.

Set up the breading station, putting the flour in one container, the egg and water in another and the bread crumbs with the cayenne pepper, Herbes de Provence and lemon pepper blend in the third container. Mix the egg and water together and stir the seasonings into the bread crumbs.

Dredge the cutlets in the flour, shaking off the excess before moving the cutlet to the egg bath. Coat in the egg wash before moving the cutlet to the bread crumb mixture. Make sure each cutlet is coated thoroughly and place on a plate before putting in the refrigerator. Let the cutlets set for at least an hour before cooking. Doing so will allow the crust to adhere to the meat, rather than "blow out" when cooked.

Half an hour before cooking take the cutlets out of the refrigerator and allow them to come to room temperature.

Put enough oil in a non-stick skillet to coat the bottom and heat the pan over medium-high heat before adding the cutlets. Do not crowd the pan. Cook for a few minutes on each side, or until golden brown. Remove to a serving platter and keep warm until ready to serve.
