  • 2 cups sliced almonds
  • 3/4 cup + 2 TB confectioner's sugar
  • 4 large egg whites
  • 1/4 tsp salt
  • 1/2 tsp almond extract

Step 1

Preheat oven to 325.
Cut a piece of wax or parchment paper to fit the bottom of an 8-inch round cake pan. Butter the pan and the paper. Sprinkle evenly with 1/2 cup almonds.

In a food processor, process remaining 1 1/2 cups almonds with 3/4 cup confectioner's sugar until finely ground.

Beat egg whites with salt until soft peaks form. Gradually add in remaining 2 TB confectioner's sugar and beat until stiff peaks form. Gently fold in ground almond mixture in three addition.

Evenly spread batter into prepared pan, tapping on counter to get rid of air bubbles.

Bake 40-45 minutes or until golden brown and firm in center. Cool completely in pan, then invert onto serving plate.
