Tasty Risotto
Yield: 4 servings
shiitake or other mushrooms sliced
Heat stock.
Sautee garlic. Add onion.
Add mushroom du jour.
Add rice and toss, making sure that the grain is coated with oil.
Deglaze pan with mirin stir, then laddle the hot vegetable stock until it barely covers.
Stir over low heat, waiting for the liquid to evaporate, then continue laddling more stock. Stock-to-rice ratio is approx 3:1.
Toss in ginger when it is almost done.
