Ingredients

  • 1 lb. lasagna noodles (12-15 noodles)
  • 4 lbs. red or white potatoes
  • 1/4 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 3/4 cup butter
  • 1 onion, sliced in rings
  • black pepper
  • salt to taste

Step 1

1. Boil your noodles, lay them out on greased parchment paper.
2. Chop the potatoes into chunks, place in pot of cold water, bring to a boil and cook till you can pierce with a fork.Drain and mashthem, blend with a mixer. Add in the sour cream and milk,salt and pepper to taste and mix some more. Stir in cheddar( I prefer freshly grated.).
3. Melt all the butter over medium-high heat, then saute the onion until softened.
4. Preheat the oven to 375 degrees F. Grease the bottom of a 9×13 baking dish with some of the butter mixture. Lay three of the noodles on the bottom of the dish, then add a layer of mashed potatoes, spreading gently. Smooth them out. Add some of the butter mixture on top.
5. Repeat this twice (or more if you like), then top with noodles and the remainder of the onions and butter.
6. Cook for 20 minutes, or until golden. Cover if u wish. Allow to cool 10 minutes before cutting.
