I serve this every Autumn…my nieces and nephews LOVE it!!
Yield: 9 servings
cups pumpkin puree (1 lg. can)
teaspoons Better Than Boullion Chicken Base
cup ½-and-½
teaspoon chopped fresh parsley
Heat stock, salt, pumpkin, onion, thyme, garlic, chicken base and pepper. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered. Stir in ½ and ½. Pour into soup bowls and garnish with parsley, sour cream and croutons.
