When you have fig jam on hand and are looking for new ways to use it, this panini with melted brie is a must. Add caramelized onion if you're feeling daring.

  • Olive oil
  • 2 tablespoons fig jam (adjust to your preference)
  • 2 to 3 slices thinly sliced brie

Step 1

I don't own a panini press. I used a cast iron skillet/grill and a bacon press!

Coat the skillet/machine with olive oil.

I like to add a thin layer of unsalted butter.

Grill the panini according to your machine's direction...or, if you don't own a machine, grill on one side and weigh down with a bacon press or even a brick covered with foil.
