Easy Black Beans

You can soak and cook black beans, according to package directions. I like to use canned beans, because they are affordable and very quick.
I use this recipe, often, to make black bean fajitas, served with grilled onion and bell pepper and rolled into a flour tortilla. It's meatless and very filling.

Ingredients
- OPTIONAL GARNISH:
- 1 can black beans, drained with 1/4 cup of juice reserved
- 1/4 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- Dollop sour cream
- Fresh cilantro
- Fresh lime juice

Preparation
Step 1
Drain and rinse the beans, reserve about 1/4 cup of the juice
In a pot, add the rinsed beans, reserved juice, spices and heat. Before serving, add a squeeze of fresh lime juice, if desired.
Serve with a slotted spoon and garnish with sour cream, and fresh chopped cilantro.
