Yummy chocolate cookie treat for anyone who loves the choc/cherry combination, with a frosting.
Yield: 48 cookies
marischino cherries(10 oz jar
UNDRAINED)
cup semisweet chocolate pieces
Preheat oven to 350. In bowl, combine flour and cocoa powder. Set aside. In a large mixing bowl, beat butter on high speed for 30 seconds. Beat in sugar,baking soda, baking powder, and salt. Beat in egg and vanilla. Gradually beat in flour/cocoa mixture.
Shape dough into one inch balls. Place on ungreased cookie sheet. Press down center of each cookie with thumb. Drain cherries, reserve juice. Halve any large cherries. Place a cherry in center of each cookie.
For frosting, in small pan,combine semisweet chocolate pieces and sweetened condensed milk. Heat until chocolate melts. Stir in 4 teaspoons reserved cherry juice.
Spoon about 1 teaspoon frosting over each cherry. If needed thin with a little wateror more juice. Bake in preheated oven for 10 minutes till edgges are firm. Cool on sheet for 1 minute;remove to racks to cool.
