A great pancake for breakfast or dessert. My sister and I ordered this at Millie's Pancake House in Walworth, Wisconsin. This one's for you, Cheryl.
large eggs
Preheat oven to 450
Pancake: Beat together eggs, milk, flour and salt until smooth. Add apples. In a 12" skillet melt 1 ½ T butter in oven. Pour in batter and put in oven after 15 minutes lower oven to 350 and bake for another 10 min. If pancake puffs up, pierce with a fork.
While pancake is baking, peel and slice apples, saute them in ¼ c butter and ¼ c sugar. Season with cinnamon and nutmeg. The apples should be tender not soft 8 to 10 minutes.
When the pancake is ready, slide it onto a plate and pour filling over one side of it. Fold it over and dust with powdered sugar.
