Mile High Popovers

These are the most heavenly popovers I have ever had. They really do rise so much in the oven. I love to put a pat of butter in the middle after they are cooked.

  • 2 eggs
  • 1 cup milk, room temp.
  • 1 T melted butter
  • 1 cup flour
  • 1/2 teaspoon salt
  • Beef drippings (optional)

Preparation

Step 1

Adjust ract to lower third of oven; preheat oven to 40 degrees. Grease each popover cup generously with soft butter or Crisco.

To make by hand, whisk together the eggs, milk and butter in a large bowl. Add the flour and salt and beat until very smooth (about the consistency of heavy cream). Pour into greased cups, filling half to two-thirds full. Bake until brown, 35 to 40 minutes

DO NOT OPEN OVEN DOOR WHILE THEY ARE BAKING OR THEY WILL COLLAPSE.

I usually double the recipe.
