Sift first three dry ingredients over medium bowl; whisk to combine evenly.
In large bowl, cream the margarine and sugar until light and fluffy. Add the egg substitute of your choice, until thoroughly combined. Add vanilla. On low speed, add half the dry ingredients and beat until combined. Add remaining dry ingredients and beat just until the flour is absorbed into dough.
Gather the dough into smooth mass, and form into three even patties (about ½ thick) and cover each with plastic wrap. Chill until firm, at least two hours.
Preheat oven to 350 degrees. Let dough come to room temperature, still covered, for about 20 minutes to soften slightly. On a lightly floured surface, roll dough to slightly more than ⅛ thick. Cut out shapes with cookie cutters, and transfer to ungreased baking sheets (placing them about 1 apart).
Bake cookies for about 17 minutes, or until edges are golden. Let sit 5 minutes, and transfer to wire racks to cool completely.
