Simple, delicious Greek salad. Favorite of my family for years.
Yield: 8 servings
grape tomatoes cut in half
cup Greek Olives or black olives
1. In a processor, process the oil, lemon juice, oregano, salt and pepper, garlic, basil, vinegar, and parmesan cheese until smooth, adjusting all ingredients to suit taste.
2. Chill in fridge for a couple of hours before using to blend flavors. Remove from freidge ½ hour prior to using and shake well.
3. Prepare salad ingredients in a large bowl or on a large platter. Pour dressing over and enjoy!
