The cookies are adapted from Wolffie's coconut chocolate chip cookie recipe in La Dolce Vegan.
The frosting in the middle is all mine!

Ingredients

  • Cookies:
  • 2 Tbsp. flax meal mixed with 3 Tbsp. water in small cup
  • 1/2 cup veg marg
  • 3/4 cup turbinado sugar
  • 1 tsp. vanilla
  • 1-1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dried cherries/cranberries
  • 3/4 cup chocolate chips
  • Frosting:
  • 2-1/2 cups powdered sugar
  • 2 Tbsp. cocoa powder
  • 3 Tbsp. veg marg
  • 2 tsp. pure vanilla
  • 1/4 cup soymilk

Preparation

Step 1

Cookies:
350F. In food processor, blend flax mix, marg, sugar, and vanilla until smooth. In large bowl, stir together flour, bp, bs, salt, dried fruit, and chocolate chips. Add marg. mixture and stir together. Roll dough into balls and lay on cookie sheet. Bake 10-12 mins. Cool 5 mins. on pan and then cool completely on wire racks.

Frosting:
Sift powdered sugar and cocoa together. Add soymilk and vanilla and mix until all incorporated and silky. Beat in veg marg with an electric hand mixer until well-blended. Refrigerate until thick.
Spread on completely cooled cookie and top with other cookie. Wrap cookie sandwiches in colored plastic wrap and store in freezer until ready to be eaten!
