Delicious thick crumbed coffee cake muffin. Adapted from epicurious.
stick butter, melted
large egg, room temp
stick butter, melted
cup plus 1 tablespoon flour
Cake: Preheat oven to 350. Put paper liners in 11 muffin cups. Whisk together the flour, baking powder, sugar, and salt. Whisk together the butter, milk,and egg in a large bowl. When combined whisk in flour mixture until just combined. May be lumpy. Pour ⅔— ½ cup full.
Crumbles:
Whisk together the butter, sugars,and cinnamon until smooth. Stir in flouur with whisk, then stir through with a butter knife to createcrumbles. Add more flour as needed to get a crumbly texture. It will dry out in oven.
Sprinkle on top of muffins.. really load them up. Sprinkle Cinnamon sugar over top.
