Yield: 4 servings
Salt & Pepper to taste
or 5 Lasagna Noodles, uncooked
Brown ground beef, drain. Add onions, carrots, and garlic and cook until onions are tender (about 3 to 5 min.). Add salt and pepper to taste. Stir in tomato sauce and tomato paste. Bring to a boil and then remove from heat.
Put ⅓ meat mixture in bottom of 2 quart slow cooker. Put a single layer of noodles on top of meat mixture, breaking noodles apart to fit. Layer in ⅓ more meat mixture. Put in 1 cup mozzarella cheese. Then another layer of noodles. Put in last third of meat mixture.
Cover and cook on low for 2 ½ to 3 hours.
Sprinkle with remaining cheese and cover until cheese has melted (about 10 min.)
If doubling recipe, adjust layers accordingly since more layers of noodles will be used. Cook in 5 to 6 quart cooker on low for 4 to 6 hours.
