Coconut Rice

Using unsweetened coconut milk and Thai Sweet Chili Sauce, you can easily transform ordinary rice into a tasty side dish.
I especially like to serve this rice with my Cashew Chipotle Chicken Recipe.

Ingredients
- 1 (14-ounce) can coconut milk (I used the lite version...don't confuse with sweetened coconut!)
- 2 cups water
- 2 cups rice (I use Jasmine rice)
- 2 tablespoons sweet chili sauce (readily available in the international aisle of most grocery stores)

Step 1
In a medium size saucepan, bring water to a boil. Add coconut milk and sweet chili sauce. Add rice. Cover and turn heat to low and cook for approximately 20 minutes.
