Ingredients

  • 1-1/2 cups Flour
  • 1-1/2 cups Oatmeal
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cube Unsalted Butter
  • 3/4 cups Brown Sugar
  • 3/4 cups Granulated Sugar
  • 2 teaspoons Vanilla
  • 1 large Egg
  • 1 cup Dried, Diced Apples
  • 1 cup Caramel Bits

Step 1

In a medium sized bowl, add the flour, oats, baking powder, baking soda and salt. Stir until well blended.

In the bowl of a KitchenAid mixer, add the butter and both sugars. Mix until mixture is light and fluffy. Add the egg and vanilla and beat well.

Add the dry ingredients and mix until just it is just combined. Mix in the apples and caramel bits.

Using a medium sized scoop (mine is about 3 tablespoons size) scoop cookies onto a parchment lined baking sheet. Smash down the rounded top a little.

Bake at 350 degrees for 11 minutes. Remove from the oven and let sit for about 3 or 4 minutes before removing them to a cooling rack.
